There’s no doubt that lattes are amazing. But if you don’t shake things up once in a while, they can get a little boring, too.
However, sometimes all you need is one unique ingredient to make a classic drink radically new!
Enter the grilled pineapple.
In this recipe, we’ll turn that latte into a completely new, exotic drink. Not only will it wow your tastebuds, but you’ll be left wanting twists for all your coffee drinks!

Turn your classic latte into an new, radically innovate drink with this grilled pineapple almond latte. We’ll show you how to create grilled pineapple syrup and combine it with a creamy almost latte to create a unique latte that you’ll never forget.

Cut the pineapple into wedges, brush with olive oil and grill.
Whisk sugar into the water until entirely dissolved.
Add the grilled pineapple, cover up the bowl, and let it sit for 1 day in the fridge

Combine the coffee, almond and vanilla extracts, and 1-2 tablespoons of your pineapple syrup together into a cup.

How to make a grilled pineapple latte
We’ve split this list into the ingredients for both the grilled pineapple syrup and the almond milk latte.
You’ll only need the syrup ingredients initially, as it will take a while to prepare. Once it’s ready you can go ahead and get out what you’ll need for the latte!
This is the most important part of the recipe – we are first making the grilled pineapple syrup. The rest of it is basically, “How to make a latte.”
However, if you don’t make the syrup right, you’re just going to have a boring (or possibly even disgusting) latte. So, pay close attention to this first section!
Note: This first step in the process will take a full day, as the concoction needs to soak for 24 hours, so make sure to factor that into when you want to make the drink!
Without further ado, here’s how to pull together your syrup!
Step #1. Prepare the Pineapple
Cut the skin off of your pineapple and then remove the core. Cut the remaining pineapple into wedges that can fit nicely on a grill.
Step #2. Grill the Pineapple
Grill the pineapple wedges using either a stovetop grill pan or an outdoor grill. Make sure to lightly brush them with a bit of olive oil to help them grill properly.
PRO TIP: Let the pineapple char slightly to add some authentic, grilled flavor!
Step #3. Mix Together
Whisk the sugar into the water until entirely dissolved. Then add in the grilled pineapple, cover up the bowl, and let it sit and steep for a full day in the refrigerator.
Step #4. Strain the Syrup
Strain the mixture through your mesh strainer or cheesecloth over your quart jar, to remove all pineapple pieces.
PRO TIP: Don’t throw away that pineapple. Eat it. It’s delicious!
Step #5. Seal and Store for Later
Seal the jar and store it in the refrigerator or cold storage room until needed.
PRO TIP – You can use this syrup in more than just a latte. It’s good for cocktails, club sodas, iced tea – whatever drink you think might benefit from a punch of sweet, pineapple-y goodness!
How to make the Almond Milk Latte
Feel free to switch out the almond milk for whatever milk you prefer in your coffee.
Just be aware that using a strongly flavored milk like almond, soy, etc. will affect the flavor of the drink. So choose a milk that will go well with pineapple!
Step #1. Brew the Espresso
A simple, yet vitally important step, brew your espresso! Or if you don’t have access to an espresso machine, make a good, strong cup of coffee (here’s a link to some great brewing options).
If you use crappy stuff or make it sloppily, you’ll be shooting yourself in the foot before you even start… and wasting all of your other efforts, too!
Good coffee is a necessary foundation for any successful coffee recipe.
Step #2. Whisk the Milk
Pour the milk into your saucepan and heat it on medium to low heat.
As the milk heats up, begin to whisk it briskly and without stopping for several minutes, allowing it to foam up. You can also use a milk frother to make this step easier.
PRO TIP – You don’t need to create a thick foam, as lattes generally have a thinner foam consistency than cappuccinos, for example. When you think it’s ready, try swirling the milk in the pan. If a small amount sticks to the sides but doesn’t overly adhere to it, you’ll know it’s ready.
Note: If using a machine, you can reference the video below for tips on foaming the milk and making a latte in general (minutes 3 to 5 cover frothing for a typical latte).
Just remember to add the ingredients in the next step to your espresso before adding the frothed milk in step 4!
Once the milk has foamed, remove it from the heat.
Putting It all together
Combine the coffee, the almond and vanilla extracts, and one to two tablespoons of your pineapple syrup together into a cup.
Pour the foamed milk into the coffee mixture. You can do this by simply pouring it in with the other ingredients in the last step.
However, if you want to create any latte art in the process, you’ll want to save the frothed milk for last.
Okay, so you didn’t technically grill the coffee. But this recipe definitely puts a new, charred twist on your typical latte!
